Somerset, New Jersey, U.S.A.-based Advanced Food Systems recently announced the release of its TenderBite Marinades product line, comprising a blend of spices and herbs specifically designed for seafood and meat to soak up flavor and maintain a juicy tendency upon cooking.
The marinades, the company said, offer meat and seafood manufacturers a unique binding matrix to trap moisture and natural juices in products before cooking. TenderBite also preserves meat and seafood to maintain tenderness after being frozen and reheated.
“Our TenderBite systems can easily be dry-blended with spices and seasonings and do not increase the cold viscosity of [a] marinade,” Advanced Food Systems said in a release.
The TenderBite line consists of eight products, ranging in flavor and taste and customized specifically for meat and seafood products, such as lean steak for use in dishes like fajitas, skirt and flank steaks, and shrimp.
Advanced Food Systems touts the product’s ability to provide manufacturers with a more tender, juicy texture, even when mixed with acidic sauces. They also allow for products to be cooked at a higher yield and improve freeze-thaw stability. Users can add the product directly with or without seasonings in a mixer.
Besides the TenderBite line, the company creates ingredients and applications across many food sectors including seafood, meat and poultry, bakery products, beverages, dips and fillings, puddings, dressings, sauces, snack foods, and seasoning applications.
